Fried potatoes with mushrooms in a pan

Compound:

  • 500 grams of potatoes
  • 200 grams of mushrooms (in our recipe, frozen fried butternuts)
  • 1 bulb
  • 50 grams of fresh dill (can be frozen)
  • salt and pepper to taste
  • vegetable oil for frying

Cooking:

  1. Peel potatoes and cut into small strips.
  2. Peel the onion and chop finely.
  3. Defrost mushrooms. If you have fresh mushrooms, then they need to be peeled, cut into small pieces and fried in a pan until tender.
  4. Fry the onion in a pan for about 5 minutes, add the potatoes and fry until almost cooked.
  5. 5 minutes before the end of frying, add mushrooms to the pan, salt and pepper.
  6. Add greens to the pan already in a fully prepared dish and mix.
  7. Serve with pickles or vegetables. We eat potatoes with mushrooms with homemade lecho .

    Fried potatoes with mushrooms is a truly Russian dish, one of the most beloved among the people. Europe does not understand us, they do not collect mushrooms! And we have a rare family that does not stock mushrooms for the winter: salted, pickled, dried, fresh. I remember in the 90s they were only saved by such preparations, when their parents were not paid salaries for several months.

  3. I have never tried fried butternut squash. We marinate them all the time. Gotta try it somehow. In my opinion, “porcini mushroom” and its similarity “boletus” are best suited for frying. But this is an amateur. I like to fry boletus mushrooms without potatoes: onion, finely chopped mushroom and sour cream with a couple of eggs. I fry mushrooms with onions and three minutes before the dish can be removed, I pour sour cream with eggs mixed in it. You can add garlic for flavor. Top notch dish!!!
