Chicken roll with prunes

The snack is beautiful in appearance and very pleasant in taste. If you try to cook it once, then in the future, not a single festively set table can do without it.

Low calorie and diet food. Despite the fact that sugar is present in the recipe, this snack can be recommended to everyone - both those who are constantly on a diet and those who have high cholesterol.

Compound:

  • 640 grams white meat chicken breast fillet
  • 70 grams of dried fruits: dried apricots, prunes and raisins (pitted)
  • 100 grams of carrots
  • 100 grams of vegetable oil
  • salt
  • ground pepper
  • sugar to taste

Cooking:

  1. Prepare fillet of white meat chicken breast. Wash. Divide into portioned even pieces, weighing approximately 80 gr. Take them off from both sides. Salt and pepper. Leave for twenty minutes. During the time that the chicken will be saturated with spices, prepare the filling for the rolls.
  2. Soak dried fruits - prunes, dried apricots and raisins - in hot water for fifteen minutes. Then grind and put in an enameled bowl.
  3. Peel, wash and grate carrots. Add to a bowl with dried fruits and sweeten with granulated sugar (optional and to taste). Mix.
  4.  Put the filling of dried fruits and carrots on the prepared base for chicken fillet rolls so that it is in the middle, and retreats an equal distance from the edges of the broken piece of chicken.
  5. Roll the resulting cakes into rolls and connect each with two small toothpicks or wooden sticks so as not to crumble.
  6. Fry each roll in a large amount of boiling oil, vegetable or olive, poured so that it reaches the middle of the side of the pan, until a golden crust appears on it on all sides.
  7. After frying, spread the rolls on a prepared and oiled baking sheet.
  8. Put the baking sheet with rolls in the oven, which is turned on and preheated to 180 degrees, for fifteen minutes.

Ready-made rolls made from boneless white meat fillet from chicken breast with prunes, dried apricots, raisins and carrots can be cut into small pieces, after removing the toothpicks or wooden sticks that hold them together. Put them beautifully on a festive dish and, if you wish, decorate with greens. You can garnish the rolls with chopped fresh vegetables.
