Compound:
- 0.5 kg beef
- 0.5 kg eggplant
- 2 onions
- 100 grams of rice
- 15 sweet peppers
- salt and pepper to taste
Cooking:
- Boil rice until half done and drain in a colander.
- Peel the onion and cut into slices.
- Turn the beef and onion in a meat grinder. Salt and pepper the finished minced meat.
- Peel the eggplant from the skin and turn in a meat grinder.
- Mix minced meat, eggplant and rice in a bowl, mix everything well and salt and pepper again.
- Prepare peppers for stuffing. Cut off the lid and remove the middle.
- Fill the peppers with prepared minced meat and put in a roaster.
- Add 0.5 cups of water and simmer for about 40 minutes over low heat.
- Before serving, if desired, decorate with herbs or put on lettuce leaves.
