Stuffed peppers with meat, rice and eggplant

Compound:

  • 0.5 kg beef
  • 0.5 kg eggplant
  • 2 onions
  • 100 grams of rice
  • 15 sweet peppers
  • salt and pepper to taste

Cooking:

  1. Boil rice until half done and drain in a colander.
  2. Peel the onion and cut into slices.
  3. Turn the beef and onion in a meat grinder. Salt and pepper the finished minced meat.
  4. Peel the eggplant from the skin and turn in a meat grinder.
  5. Mix minced meat, eggplant and rice in a bowl, mix everything well and salt and pepper again.
  6. Prepare peppers for stuffing. Cut off the lid and remove the middle.
  7. Fill the peppers with prepared minced meat and put in a roaster.
  8. Add 0.5 cups of water and simmer for about 40 minutes over low heat.
  9. Before serving, if desired, decorate with herbs or put on lettuce leaves.
